At Casa Donoso, aging is never just a waiting period—it is an art form. To truly honor the extraordinary diversity of our four estates, our enological team crafts each wine using five distinct aging methods. Every vessel speaks its own language, shaping the texture, structure, and soul of our premium portfolio.

French Oak Barrels

Celebrated for its tight wood grain, French oak allows for an incredibly slow, gentle micro-oxygenation. It imparts silky, refined tannins and weaves subtle, complex layers of spice, cedar, and tobacco into the wine. This technique respects the fruit above all, adding structure and timeless elegance.

American Oak Barrels

With a wider, more expressive grain, American oak interacts dynamically with the wine. It rounds out the palate, softening the tannins while coating the wine in rich, inviting notes of sweet vanilla, coconut, and toasted wood. It brings a luscious volume and an immediately approachable warmth.

Clay Amphorae

A profound tribute to traditional Chilean winemaking heritage, our clay tinajas allow the wine to breathe naturally without adding any oak flavors. This porous, earthy environment preserves the raw, unadulterated expression of our terroir. The result is a wine defined by its vibrant, naked fruit character and a unique, tactile depth.

Concrete Eggs

The ovoid shape of the concrete egg creates a natural, continuous vortex current, keeping the lees in constant suspension. This constant movement naturally amplifies the wine's creaminess, weight, and volume in the mouth, while the raw concrete accents the wine's crisp minerality and pure aromatic freshness.

Spirits Barrels

The frontier of modern winemaking. By finishing select lots in barrels previously used for fine spirits, we unlock an entirely new dimension of complexity. This avant-garde technique infuses the wine with deep, robust notes of caramel, smoke, and charred spice, creating a bold, unforgettable flavor profile for the adventurous palate.

PRODUCTION

Our central production facility is located at Fundo La Oriental in Talca, where honoring delivery timelines and commitments to our global clients is our absolute priority. Operating at peak efficiency, our modern bottling line seamlessly processes 3,200 bottles per hour, allowing us to achieve a robust daily output of approximately 18,000 bottles during a standard working day.
